[fruity summer greetings] Windbeutel with mascarpone filling and berries


No idea what to bake this afternoon? Here ist the perfect last minute recipe for hot and lazy summer days: Windbeutel! There are made in a very short time and you can actually fill them with anything you like! My family goes crazy when I am baking these sweeties because everyone can add their favourite ingredient, such as nutella (for my brother), chocolate chips, chocolate syrup, brittle, cookie crumbles, fruit (banana, blueberries, blackberries, raspberries…).


The correct translation would be ‘cream puff’. This comes because in detail it is a very fluffy dough (choux pastry) which is baked at high temperature! The basic filling is heavy cream combined with any kind of fruit. Because I am addicted to mascarpone (especially in combination with strawberries) my filling had to include it! But of course you can as well add curd cheese, yoghurt or even ricotta (but you have to keep an eye on the consistence, better use a package of stabilizer for whipping cream!). When you don’t have anything of these ingredients at home you can just use ice cream instead!!

I think there are no more words needed to describe this fantastic treat for hot and sunny afternoons! Time to grab it and go outside to enjoy the sun! 🙂


Windbeutel with mascarpone filling

375 g water
0,5 tablespoon salt
100 g butter
200 g flour (sifted)
5 eggs

250 g mascapone
250 g heavy cream
1 tbsp. vanilla extract
1 tbsp. vanilla sugar
confectioner’s sugar


  1. In a heavy and wide saucepan, stir together the water, butter and salt and let it boil while stiring it the whole time. Remove from heat and add the sifted flour with wooden spoon until no flour can be seen anymore and it turns into a white clump. Transfer into another bowl.
  2. Now add the eggs one after another (!!) and stir very well with an electric mixture until the eggs are incorporated and mixture is clump again.
  3. Preheat oven to 220°C and prepare baking sheets. Transfer the dough to a pastry bag. Now pipe dough in small piles (or any size you prefer.
  4. Bake for 20-28 minutes (depends on your oven and the size of the Windbeutel!). Then remove from oven and tranfer them to a wire rack. Let them cool completely.
  5. Prepare filling: Beat mascapone together with the vanilla extract and vanilla sugar until creamy. In another bowl beat heavy cream until its smooth. Now combine both creams. Cut the fruit into smaller chunks as you prefer.Slice the Windbeutel and fill with the filling and fruit. Decorate with confectioner’s sugar.

[declaration of my strawberry love] Brownie sandwiches with strawberries and mascarpone


Summer is nearly over and this means that strawberry season is nearly over too. The official time for strawberries is from May to August. So this recipe is just in time! I am a big fan of strawberries and could eat tons of them! Dipped and glazed with chocolate, combined with a large glass of fresh milk or as a fruity filling for cakes!

When I was younger (okay I have to admit still today) I used to pick strawberries from my grandparents’ garden. Of course I couldn’t resist eating most of them right away. Unfortunately because of my constant snacking of the sweet berries I wasn’t hungry anymore when my grandma baked her famous strawberry cake! When I grew up I learned that it is also possible to have both: snacking a little less strawberries and eating a small piece of granny’s cake!  As the word is: It’s never too late to learn..!


Today I would like to show you one of my favorite strawberry recipes. The combination of the sweet taste of strawberries, the strong chocolate flavor of the brownie and the Mascarpone and heavy cream vanilla filling is a treat you should give to yourself!

Brownie Sandwiches with strawberries and mascarpone

300 g good quality dark chocolate
2 eggs
50 g butter
1 tbsp. vanilla extract
80 g sugar
65 g flour
0,5 tbsp. baking soda
pinch of salt

for the filling:
125 g mascarpone
100 g yoghurt
125 g cottage cheese
125 g heavy cream
3 tbsp Muscovado sugar (or Brown sugar)
1 tbsp. vanilla extract

650 g strawberries


  1. In a bowl placed over a saucepan of simmering water melt the chocolate and butter. Remove from heat and let it cool completely (otherwise your brownies will turn out hard and dry!).
  2. Preheat oven to 170°C. Line a pan with parchment paper. In a bowl cream together the eggs, sugar and vanilla extract. Mix in the melted chocolate mixture.
  3. In another bowl whisk together the flour, baking soda and salt and slowly add to the chocolate-egg mix with a wooden spoon.
  4. Pour into the prepared pan and bake for about 20 minutes. Remove from oven and let cool completely.
  5. For the filling: Mix together Mascarpone, yoghurt, cottage cheese, sugar and vanilla extract. Beat the heavy cream until stiff and add to the filling.
  6. With a cookie cutter cut out any shapes you like of the brownie. Then put some filling on your piece of brownie and place another piece on top. Add more filling and decorate with strawberries.

[the everyday-everytime-everywhere] Banana strawberry Nutella semifreddo


If someone ask for one thing which is typically for a german breakfast. The answer will be Nutella. When my brothers and me went shopping with my mum they were a few things we wanted to have everytime. First some colorful packed sweets which look very appealing for kids but taste horrible. And last but not least: Nutella. The magic chocolate spread which is a little bit nutty and chocolatly in taste.


When I thought about an ice cream combination, I had to think about something with Nutella in it (+ when I visited my family this weekend my mum bought a new XXL family jar of Nutella!). And is there anything better than the combination of chocolate and banana? Yes! If you add a few strawberries, it will turn out creamy and refreshing on one side and rich in chocolate and banana taste on the other side. I called this kind of ice cream “semifreddo” which means half frozen. It’s important to mention that this recipe is without an egg, therefore the texture is less creamy and it tastes better when you take it off the freezer 10-15 minutes earlier.



Banana strawberry Nutella semifreddo

200 g bananas
200 g heavy cream
Handful of strawberries (about 50 g)
1 tablespoon vanilla sugar
2 tablespoon Nutella or any other chocolate spread


  1. In a blender mix together the bananas and heavy cream. Add the strawberries and vanilla sugar. The consistency should be semi fluid. If you want it sweeter add sugar.
  2. Fill in a plastic box. Next add the Nutella with a spoon.
  3. Freeze in for at least 6 hours.



By the way, my mum always bought very healthy food! (but of course up to today somtimes a glass of Nutella ends up in our shopping bag!)
